Dried onion preserves the vitamin and mineral composition of fresh onions. It contains essential oil containing sulfur; Sugars such as glucose, fructose, sucrose, maltose (up to 11%), inulin, phytin, in addition, nitrogenous substances (up to 2.5%), vitamins of C (10 mg%), B1 (60 mg%), provitamin A (carotene), flavonoids (quercetin and its glycosides), traces of iodine. Leaves (“feather”) contain essential oils, sugars, vitamins of C (20 mg %), B2 (50 mg %), provitamin A (4 mg%), citric, malic and other acids. The whole plant has phytoncidal activity. In dried form, onion preserves most of its useful properties. Moisture of the onions is up to 14%.
