Carrot is a very useful vegetable for the body. Carrots contain vitamins of PP, C, E, K, carotene – a substance which is converted in the human body to vitamin A. The composition of dried carrots differentiate due to high carotene content, and dietary fiber, potassium, iron, phosphorus, vitamin C and folic acid. Dried carrot comprises of sugar, fatty oil, nitrogenous substances, mineral salts, asparagine, umbelliferone, flavonoids, a number of enzymes (amylase, invertase, protease, lipase, peroxidase, catalase), pigments – various carotenes, phytoene, phytofluene, lycopene, and various vitamins such as provitamin A, vitamins of B, B2, C, pantothenic acid, folic acid, PP. Dried carrots are produced with mass moisture content of less than 14%. One kilogram of dried carrots is equivalent to 6-8 kg fresh carrots.
